Disclaimer:  I usually use PuTTY to set up tunnels, so I don't know the 
CLI way to do it.

Do you know the details of how the update process connects to the update 
site?  If you can point the update process at an arbitrary address, I 
think you can accomplish what you want by setting up a "dynamic tunnel", 
which is very much like a web proxy.
