How about 2 drives and a unionfs? You can always recreate the union to its original state. I think asus did something similar with the eepcs.

Licencing comes into play here as well, which makes using Ghost (and
sending a Ghost image home with the user) somewhat tricky. 

There are imaging alternatives on Linux, but from some (really
shallow) exploration in the past none were very good. NTFS support is
the big barrier.
