You could just disable the startup scripts (I don't know how to do that in Centos, but in Debian just remove the execution bit under /etc/init.d)
That way you still have Apache installed, but it won't start up automatically.

Apache came with the preconfigured image of this server I've been afraid to remove it but I guess your right just blow it off I should be fine.
I'm just a bit more cautious on production systems.
