As safe as an OS is for end users.
Greasemonkey in and of itself is safe.
Annoying, until you go turn off the notifications with updates, but
that's another story.
Whether you wish to expose yourself to inevitable questions surrounding
what is the beastie, and how do you use it, that too is another story.
If you find a script that makes life so much easier that you feel it
worthy of including in your standard install, then it is as suitable to
install greasemonkey as any other piece of software.
Without such script, whether to include greasemonkey is arguable. Most
any script worth it's salt points out the need, and seems to make it
pretty easy to do so by pointing to the relevant site. On that basis
it's reasonable to not include it, unless you find such a script as
above. e.g. Videos 'just work'.
I have yet to see anything creep into greasemonkey. If a script wants to
install, the user must OK it. Just alike any other firefox / browser
add-on, extension, or plugin. So greasemonkey is as safe to include as a
browser is.
Mind you ... I had it turned off ... felt like it was imposing an
overhead penalty that got annoying. (Every page load will include a 'any
scripts to run here? call', and with http:/* and https:/* the norm,
every page takes the hit. Add enough extensions or add-ons, as I have,
and collectively you feel the hit.) YMMV.
