In my experiment, I brought the Internet in through a VLAN on the switch (PPPoE all the way to the pfSense even!) so _everything_ was on 1 NIC.
IIRC, pfSense lets you create interfaces for the VLANs when you first install it from the bootup process (as well as from the web UI later) and it seemed intuitive enough that I got it right on the first try.
