[kwlug-disc] Email server (lets bring this up again!)

So once more into the (mail) fold, but with a little bit of a twist.
I've had a mail server sitting out there, barely used, for quite some
time. I've set up DKIM, SPF and spamassasin. I'm not too worried about
spam, this is mostly a server I play with, to see if I can learn something
new.
At a recent home and garden show, one of the vendors mentioned that
someone with their own domain, used the vendor's business name as part of
the email. So a company named 'Ron Howard Construction' would be given the
email 'ronhoward at mydomain.com'.
I assumed this would just be a catch-all, which works... but with one
caveat; you can't easily respond with 'ronhoward'. Instead, your catch-all
address is returned, which kind of defeats the purpose.
I would like to set this up, mostly just because it's there, and I want
to... I may never use it...
So I'm wondering if any of you lot out there have heard of something like
this?
A paid service, perhaps?
A way to trick postfix/dovecot (or perhaps Roundcube) into behaving in this
manner?
