In Gmail, using "Show original" on your original message in the voip.ms
thread from yesterday, I see the following:

Content-Type: text/plain; charset="utf-8"
Content-Transfer-Encoding: base64

That may be the list encoding doing some conversion before sending to
everyone.

I don't have any diagnosis or solution to the =20 problem.
Just wanted to point out that they originated with two of your emails.
