On fastmail, you can use '*' as an alias, which functions as a catchall 
(it runs last, so other aliases take precidence). Replies will 
automatically come 'from' the alias that received the mail (if you're 
using the web -- again, using clients requires you to configure them to 
do this).

The only quirk with '*' alias is with the signature adjustment. Fastmail 
is smart enough to substitute your email address in your signature for 
the alias, but will actually insert '*@chrisirwin.ca'.
